The Chimayo Chile comes from the high altitude town of Chimayo in northern New Mexico where it has been grown for many generations. This variety is prolific, early, and is known for its moderately hot yet sweet, complex flavor. Great when eaten or processed fresh but flavors only deepen and intensify when dried down. Makes an excellent chile powder and delectable hot sauce. The best and earliest chile I’ve found for our northern gardens. Seed stock shared by John Austin.
