From the Slow Food Ark of Taste comes this fascinating black turnip. An ancient variety grown almost exclusively in south Western France, it is said to have been served at the King’s table in Versailles. After WWII, there was a decline in local agriculture and the cultivation of the variety became increasingly rare. It is now considered a virtual wild form of turnip, free from any breeder manipulation. Creamy white flesh, and mild with a chestnut flavor. Great raw, roasted or sauteed, as they enjoy it in France.
