COMING SOON!!! Also known as Zapallito del tronco, this squash was brought north from South America in the 1870’s. It is said to have been grown as a staple by indigenous communities in Chile and Argentina. The name means trunk squash, or squash of the stem, which might make sense when you see how abundantly fruits develop from their thick, bushy stems (see pictures). It is eaten as both a summer and winter squash. We prefer it as a summer squash, which is saying something because we’re not huge zucchini fans. The flavor is delicate and fresh, and the texture is firm and avocado-like. For summer eating, we harvest up to 4-5ish” in size, before seeds start to develop. If you let them develop to full maturity, they size up more and store well as a winter squash. With a large seed cavity and deep orange color, we like to stuff them or put them up into soups either blended or cut into chunks. This is a fast maturing, very abundant, resilient squash with a compact habit that sends out short vines later in the season. Seed stock shared by John Austin.
